Cake talk!!!!

alright, ladies. It's crunch time. Time to figure out what flavor of cake you would love to smoosh into one another's faces.




Cake Flavors:
Vanilla
Lemon
Chocolate
Mocha
Champagne
Margarita


Fillings/ Curds:
Lemon Curd
Lime Curd (key limes, probably)
Orange Curd
Mango Curd
strawberry curd

Fillings/ pastry cremes:
Vanilla
Chocolate
Caramel
Mocha

Fillings/ Fruit:
Strawberry
Raspberry
Banana


Here are some things to keep in mind-- we are icing the whole thing in a Swiss Meringue Buttercream, which will leave us with a TON of egg yolks. In that vein, it makes the most sense to incorporate them into some kind of curd filling. However, each tier of the cake will have 4 layers, so all the layers don't need to be filled with the same filling. For example, we could do a champagne cake with alternating layers of orange curd and vanilla pastry cream for a mimosa-esque experience. Or we could do a margarita cake with layers of lime curd and strawberry fruit filling.

We'll get more bang for out buck by making a curd, too. 

It will be easier to choose just one cake flavor and one filling flavor. But its your freakin' wedding, so shoot for the moon, ladies.

once we have the flavors picked out, I'll put together the ingredients list and we'll price the whole thing out. Get ready, we're going to go through a few dozen eggs and several pounds of butter.... also, if you can track down a stand mixer (or two) this whole thing will go a lot faster. We'll touch base on Saturday.
